Italian Pepper Leaf Curl?

I'm having some trouble with our two month old Italian Pepper plants, after pinching off a few early buds to encourage growth the leaves appear to fold/curl inwards on new growth. What can cause this and how can I fix it? Thank you in advance!

Hi,
Some information, what is the average temperature day and night ? Generally the leaves curl due to lack of water or low temperatures. Also may be due to virus disease (but it is not in your case). The chlorotic leaves not seem to get enough minerals.Did you gave nitrates? Also monitor the health of the roots.
The leaves have a low content of chlorophyll and stem look very lignified!

The temperature averages between 26-28C during the day and no lower than 15C at night. I may not be watering enough as I'm worried about overwatering (they never seemed to drink much before, but we have recently transplanted them into the large tub from a germination/sprouting container). We give a root stimulant in very small quantities but I'm not sure of the nitrate levels as I've contacted the manufacturer and they won't get back to us on the nutrient levels in the root stimulant.

If you tell me that there has been overwatering, you will want to check the roots. The roots affected by root rot will look black and will feel mushy.
