Generally fig tree does not need pruning, but to initiate flower bud for next year one should prune only after current year fruit ripening (i.e., early in the summer). The recommended time for pruning is in late March (you can cut out dead stems and weak branches before growth starts) and in mid June (remove the shoot tips from the new growth, leaving four to five leaves).

Also, you have to keep in mind that pruning of late maturing cultivars may leads to major reduction in yield the next year and heavy winter pruning can eliminate the entire crop the following year.
