Hi Eunice,
Depending of the variety, Cassava can be harvested between 8 to 12 months. You can leave the roots in the ground for up to two years, but they will become fibrous and lose some of the market value you also expose them to be destroyed by rats and other pests. You will lose your production if you leave your cassava in the field for up to three years.
