Generally pigeon pea (Cajanus cajan) is very hard crop which can grow in poor soil with minimum water. It is highly heat tolerant and can grow in any region with tropical and subtropical climate.
Required conditions:
1. Hot moist condition
2. Temperature range - minimum 18 degree celsius to maximum > 35 degree celsius
3. Any type of soil with pH 5.0 to 7.0 (but very sensitive to saline soil and water logging conditions)
4. Can grow up to an altitude of 1250 m above sea level.
Since Las Vegas is situated 610 m above sea level and meets all other conditions I think you can grow pigeon pea in your area.
