How to grow spinach indoors?

How would I grow an indoor garden over the winter, in Utah - spinach, parsley.
What are the best things to grow in a south facing window - or a south west facing sky light?
I have a shelf in this small window, two feet wide one foot high, grew all my seeds here for this year's garden. Now I want to grow something all winter.

It has some good tips for doing so with lights. I also provided an answer there about micro-greens, which are planted and harvested in 10 day intervals, so might do well on a south-facing window.

spinach is a cold favoring plant that's quick to bolt at room temps.It also doesn't seem to do well with more than 8 hours of direct sun, morning sun being better than afternoon sun. Also, you'll need to avoid interrupting he plants' light/ dark cycle with household lighting. It may seem a little strange, but you may have more luck in an east or southeast facing window that's a little drafty.
